Founded in 2005, Sol y Cafe is now comprised of over 1000 coffee producing families. Conscious has partnered with Sol y Cafe through COOP Coffees since 2012 and continue to be thrilled by the quality and consistency of this coffee each year. This coffee in particular cups as a AAA quality lot, which is the highest quality bracket for Peru exports. The lot is roasted as a medium roast, which brings out notes of bittersweet chocolate and caramel with a mild fruit-like acidity, reminiscent of dried apricots.
